Menu is predominantly organic with local produce imaginatively used. Here is Trout from Tjärö served with Languistine Dumplings in a dainty copper pan of stock, with turnip ribbons and pak choy. Desserts include rhubarb, with fennel meringue and soured cream ice, garnished with wafer thin dried rhubarb.
